Banana bread has always reminded me of war. You may be wondering, “Which war?” and I can quite honestly say, “All of them.”
Genetic, historic, and even actual wars have been fought over bananas. And bread is a mainstay throughout history. Didn’t Marie Antoinette say something about cake which is basically what banana bread is? If you disagree, you should check out my simple red velvet cake recipe!
But I digress. The real reason banana bread reminds me of war is because my grandmother would always bake it while she waited for papi to return from Europe. From the plains of North Dakota, she faced loneliness and rationing and the long expanse of time that not only aged her heart... but also her bananas.

In times of rationing, an overripe banana made the perfect substitute for sugar and moisture - allowing them to clean their plates while using less. My grandmother described her banana bread invention as her greatest pride and joy. She spent years honing it at home awaiting papi’s return. And while she arrived at the perfect recipe, her husband never had the chance to try it (not because he died, he just took on a mistress and decided it would be easier to stay across the pond rather than face my grandmother’s wrath).
